Caramelized Mushroom and Roasted Cherry Tomato Strata

Strata is a comforting and cozy dish consisting of bread that’s baked with eggs, cream, and cheese, like a savory bread pudding. It’s versatile: use it with your favorite seasonal veggies or cheese. Strata should be made the night before, leaving extra time to sleep in. Whisk Morton® Fine Sea Salt with fresh milk to evenly season this dish, making every bite a burst of flavor.

Ingredients

  • 3 tablespoons olive oil
  • 2 cups sliced cremini mushrooms
  • 10 eggs
  • 3 cups milk
  • 1 ½ cups grated cheddar
  • 1 cup grated fontina
  • 1 cup grated Parmesan
  • 1 ½ teaspoons ® Fine Sea Salt
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon cayenne
  • 1 cup baby spinach
  • 16-ounce loaf of crusty bread, cut into 1-inch cubes
  • 1 pint cherry tomatoes

  1. Warm a large skillet over medium heat. Add the olive oil and saute the cremini mushrooms until golden brown, stirring, about 8-10 minutes.

  2. In a large bowl, whisk the eggs. Add the milk, cheese, salt, pepper, Morton® Fine Sea Salt, nutmeg, and cayenne, and whisk to combine.

  3. Layer a greased 9×13 baking dish with the cubed bread, sautéed mushrooms, spinach, and cherry tomatoes.

  4. Pour the egg mixture directly over the bread.

  5. Cover with plastic wrap and refrigerate overnight.

  6. Preheat the oven to 350° Fahrenheit.

  7. Unwrap the strata bake in the oven for 40 to 50 minutes. The strata is ready when it’s golden brown on top and set on the bottom.

  8. Cool for at least 10 minutes before serving.

Tip: Make ahead: Prepare the strata the night before. Stale bread is also perfect for strata but you can also toast the bread cubes if using fresh.
