Salt Crusted Branzino

Recipe provided by Chef Joel Gamoran (@joelgamoran)

Salt crusted anything is awesome, but it’s hard to beat branzino. We’re stuffing this bad boy with savory herbs and tons of citrus to yield a flavor bomb, fall apart fish experience.

I love using Morton® Coarse Kosher Salt because the shape of the grains help to cook the dish evenly, making sure that every bite is delicious.

Tips For Success

Cooking/Food Waste Tips:

  • Don’t trash the bones – save those for use in chowders and stocks. They’re culinary gold!
  • Crusting fish in salt locks in the natural flavors of the fish and creates a heat-seal within the fish, resulting in a more flavorful result.
  • If you must find a substitute for branzino, acceptable options include black sea bass, Atlantic croaker, red snapper, tilapia, rainbow trout and whiting.
