Salt Crusted Branzino

Salt crusted anything is awesome, but it's hard to beat branzino. We're stuffing this bad boy with savory herbs and tons of citrus to yield a flavor bomb, fall apart fish experience.

I love using Morton® Coarse Kosher Salt because the shape of the grains help to cook the dish evenly, making sure that every bite is delicious.

Ingredients

  • 1 whole branzino
  • 4 egg whites
  • 2 cups Morton® Coarse Kosher Salt
  • 8-10 sprigs of thyme
  • 1 parsley bunch with stems
  • 2 lemons, sliced
  • 3 cloves garlic, smashed

COARSE KOSHER SALT

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Mix egg whites with Morton® Coarse Kosher Salt and stir to make a paste.

  3. Rub paste all over the branzino.

  4. Stuff with thyme sprigs, parsley, lemon slices, and garlic.

  5. Bake on a baking sheet for 15-20 minutes, until cooked through.

Cooking/Food Waste Tips:

●      Don’t trash the bones – save those for use in chowders and stocks. They’re culinary gold!

●      Crusting fish in salt locks in the natural flavors of the fish and creates a heat-seal within the fish, resulting in a more flavorful result.

●      If you must find a substitute for branzino, acceptable options include black sea bass, Atlantic croaker, red snapper, tilapia, rainbow trout and whiting.
