Looking around your kitchen for an easy side and spot a couple of potatoes from last week’s grocery haul? Well, use up the spuds by crisping them up in leftover bacon drippings saved from breakfast (look at you being all scrappy). Fry up these killer home fries for any occasion.

I love using Morton® Coarse Kosher Salt because the shape, size, and texture of the grains make it easy to grab and sprinkle just the right amount. This allows you to control how much salt is added to your cooking ensuring the right balance of flavor.

- Turn your unused potatoes and veggies into a quick and easy side.
- Take it one step further, and use that leftover bacon fat from your breakfast for flavor-infused frying!

Ingredients

  • 3 Yukon Gold potatoes
  • 1 ½ tsp. Morton® Coarse Kosher Salt (divided)
  • 1/4 cup bacon fat
  • 1 onion, chopped
  • 6 pickled peppers, chopped
  • 3 chives, sliced

COARSE KOSHER SALT

  1. Bring a large pot of water to a boil.

  2. Wash and dry your potatoes. Leaving the skin on, cut them into fries.

  3. Add fries to boiling water and boil for 15 minutes, until tender.

  4. Drain in a colander and salt them with ¾ tsp Morton ® Coarse Kosher salt. 

  5. Toss potatoes in the colander to dry them out and break them.

  6. Place bacon fat in a frying pan over high heat.

  7. Add the onion and cook through about 5-7 minutes.

  8. Toss the fries in to get crispy. Only toss a couple of times to allow the surfaces to get brown and crispy. 

     

  9. Add the pickled peppers and chive.

  10. Stir to combine.

  11. Remove from heat, salt with remaining salt and serve!
