Warm a large skillet over medium heat. Add the olive oil and saute the cremini mushrooms until golden brown, stirring, about 8-10 minutes.

In a large bowl, whisk the eggs. Add the milk, cheese, salt, pepper, Morton® Fine Sea Salt, nutmeg, and cayenne, and whisk to combine.
Layer a greased 9×13 baking dish with the cubed bread, sautéed mushrooms, spinach, and cherry tomatoes.

Pour the egg mixture directly over the bread.
Cover with plastic wrap and refrigerate overnight.
Preheat the oven to 350° Fahrenheit.
Unwrap the strata bake in the oven for 40 to 50 minutes. The strata is ready when it’s golden brown on top and set on the bottom.
Cool for at least 10 minutes before serving.
