Sea Salt Coffee Shortbread

This dessert is so great it speaks for itself, so I’ll keep this short – Shortbread is hard to beat! If you can’t get enough of that coffee flavor, you’ll love this savory spin on sweet dish that will be the perfect companion to your morning drink.
I love using Morton® Coarse Sea Salt in this dish. It adds a contrasting salty flavor to the sweet shortbread and an unexpected crunch and texture to this irresistible treat! The coffee grounds add a bitterness to this dessert, making it a flavorful twist on a timeless classic.

Ingredients

  • 3/4 lb. unsalted butter, room temperature
  • 1 cup sugar
  • 2 tbsp. spent coffee grounds
  • 1 tsp. vanilla
  • 3 3/4 cups flour
  • 1 ½ tsp. Morton® Coarse Sea Salt

  1. Preheat the oven to 350 degrees Fahrenheit.

     

  2. In a bowl, combine the butter and sugar.

     

  3. Add the coffee grounds, vanilla, and flour and stir to form a dough.

  4. Place the dough in the refrigerator and chill for 10 minutes.

  5. Then, take the dough and roll out to ½ thick cutting into 3”x 2” rectangles.

  6. Place on a baking sheet and sprinkle with Morton® Coarse Sea Salt.

     

  7. Bake for 15-20 minutes.

  8.  Allow to cool on a wire rack for 15 minutes.

  9. Place in an airtight container for up to 7 days.

Cooking/Food Waste Tips:

●      Every day we toss our spent coffee grounds, but no need, they deserve a second chance. Adding spent grounds into sweet recipes like this reduces waste and gives your dishes a unique twist.

●      Spent coffee grounds can also be added to savory dishes. Next time you’re cooking your favorite rib-eye, prime rib or steak, make a delicious crust with your spent coffee grounds to amp up the flavor!
