Spicy Oriental Plum Marinade

Prep Time: 15 Minutes
Servings: Makes 1/2 cup

 

 
Ingredients 
1/4 cup honey
1/4 cup rice wine vinegar
1/4 cup prepared plum jam
1 teaspoon Morton® Coarse Kosher Salt
1 garlic clove, minced
1 teaspoon minced fresh ginger root *
1 teaspoon red chili paste **
2 tablespoons sliced green onions
 

 

Directions

Combine ingredients, except red chili paste and green onions, in small saucepan. Cook and stir until sauce *** and becomes shiny. Stir in remaining ingredients. Cool 15 minutes. Store in airtight container in refrigerator until needed.



Chicken – Brush chicken pieces generously with marinade. Allow to marinate in refrigerator at least 30 minutes. Discard marinade. Proceed to bake, broil or grill until chicken is cooked through and juices run clear. (**** Internal temperature -- 170° F. for poultry breast pieces; internal temperature -- 180° F. for poultry thighs and wings).



Tips:


* Substitute 1/4 teaspoon ginger powder for fresh ginger root.

** Red Chili paste (Sambal Olek) can be found at the oriental section in most supermarkets or in specialty Asian markets. If not available, substitute one (1) teaspoon dry Chinese mustard mixed with one (1) teaspoon water.

*** Microwave Directions: Combine ingredients in Microwave safe bowl. Heat on HIGH in covered bowl for 2 minutes. Whisk to incorporate ingredients.
