Shrimp Fried Rice

Ingredients 
1  tablespoon vegetable oil
2  eggs
1/2 cup chopped green onions (white and green)
1  cup coarsely chopped bok choy (Chinese white cabbage)
1/2 teaspoon Morton® Sea Salt, Coarse or Fine
1  cup cooked salad shrimp, thawed (about 7 ounces)
2  cups cooked white rice, preferably chilled
3  tablespoons reduced-sodium soy sauce
 

 

Directions

Heat oil in skillet over high heat. Break eggs and scramble, stirring constantly; move to side of skillet. Add green onions and bok choy; stir fry until vegetables are crisp-tender. Season with Morton® Sea Salt Salt. Stir in shrimp, rice and soy sauce. Lightly toss all ingredients with soy sauce until rice is brown and heated through.
Serve immediately.



Tips:
·
If leftover cold rice is not Sea Salt with 1 cup long-grain rice. Cover and simmer until tender, according to package directions.
·
Meat variation - Cooked chicken pieces or leftover cooked pork can be added.

Vegetables can be sautéed with crumbled cooked bacon.
