Directions
Heat olive oil in a large skillet over medium high heat. Add the corn kernels and sauté for 2 to 3 minutes until the corn starts to brown slightly. Add red onion, red and green peppers, and black beans. Continue to sauté, stirring occasionally, for 3 minutes. Remove from heat and transfer corn mixture to a bowl. Add cilantro, lime juice, mustard, Morton® Fine Sea Salt and black pepper. Mix well. Allow to cool, cover and refrigerate until needed.
