Lamb Chops with Mint Molasses Basting Sauce

Ingredients 
2 racks lamb, frenched* and cut into 1-inch thick bone in chops (about 7 chops per rack)
3 tablespooons  Morton® Nature's Seasons® Seasoning Blend 

Mint Molasses Basting Sauce
¼ cup molasses
1 tablespoon olive oil
2 tablespoons malt vinegar
1 tablespoon honey mustard
1 tablespoon chopped fresh herbs (mint, thyme, rosemary)
 

 

Directions

1. Preheat grill to medium-high (about 450° F).


2. Rub lamb chops all over with Morton® Nature's Seasons®
Seasoning Blend, pressing the seasoning into the meat
to adhere.


3. In a bowl whisk together the molasses, olive oil,
vinegar, honey mustard, mint and fresh
herbs. Season to taste with Morton® Nature's Seasons®
Seasoning Blend and set aside.


4. On well seasoned grill, grill lamb chops for 3 to 4
minutes per side, basting with reserved mint molasses
sauce until lightly charred, glazed and cooked to
desired doneness. (An instant read thermometer should
register 145° F for medium-rare.)


5. Remove from grill and serve with extra basting
sauce.


*Tip: Frenching is a butcher’s term for scraping the
rib bones clean of meat, fat and gristle.
