Filet Of Sole Florentine

Ingredients 
2-4 sole filets (about 1 lb)
3 tablespoons olive oil, divided
4 teaspoons fresh lemon juice
Prepared no salt lemon pepper seasoning blend, to taste
1 garlic clove, minced**
2 tablespoons chopped onion
1-1/2 cups chopped, fresh spinach
1/3 cup chopped red pepper
3 tablespoons chopped fresh dill

Directions

Season each filet with 1 teaspoon oil, lemon juice and seasoning blend. Marinate in refrigerator 1 hour.
Heat remaining olive oil in skillet. Add garlic and onions; cook and stir until onions are soft. Stir in spinach, red peppers and dill. Cook and stir 1 minute; cool. Evenly spoon spinach mixture onto each filet. Roll; place seam side down in greased baking pan. Sprinkle rolled filets with additional no salt seasoning blend. Bake at 350°F, 20 to 25 minutes or until fish flakes easily with a fork. Season to taste with Morton® Salt Substitute.



* TIP: If sole filets are 5 to 6 inches wide, cut in half lengthwise before stuffing and rolling.



**TIP: Nature's Roasted Garlic recipe may be substituted.
