Angel Hair Pasta & Garden Fresh Plum Tomato Sauce

Ingredients 
3 cups coarsely chopped fresh tomatoes or cherry tomato halves
1/2 cup extra virgin olive oil
3 cloves garlic, crushed
1/2 teaspoon red pepper flakes, crushed
1 pound uncooked angel hair pasta
3/4 teaspoon Morton® Lite Salt® Mixture or Morton® Salt Balance® Salt Blend, divided
1/2 teaspoon freshly ground black pepper
1 cup loosely packed fresh basil leaves, chopped
2 tablespoons Freshly grated Parmesan cheese, optional
 

 

Directions

In large glass bowl, combine tomatoes with oil, garlic, and red pepper flakes. Cover and allow to marinate in a cool spot (not refrigerated) for about 2 hours.
Cook pasta according to package directions, substituting Morton® Lite Salt® Mixture or Morton® Salt Balance® Salt Blend. Reserve 1/2 cup cooking liquid, then drain. Toss pasta with pasta liquid and 1/4 teaspoon salt. Season the tomato sauce with remaining 1/2 teaspoon salt and pepper; stir in basil. Toss tomato sauce with pasta. Sprinkle with cheese, if desired. Serve immediately or at room temperature.
