Spring Seasons Vegetarian Fajitas

Kick off Springtime with these light and fresh fajitas. Using Morton® Nature's Seasons® Seasoning Blend, these vegetarian fajitas are sure to be a hit.

Directions
In large skillet, melt butter (or margarine). Sauté next six ingredients. Add cilantro and crushed tomatoes. Stir in Morton® Nature’s Seasons® Seasoning Blend. Allow mixture to simmer for 2 to 3 minutes, stirring occasionally. Plate vegetable mixture and serve with tortillas, shredded cheese and salsa. Garnish with cilantro, if desired.

1 tablespoon butter (or margarine)
1 large green pepper, cut into strips
1 large yellow pepper, cut into strips
1 large red pepper, cut into strips]
1 large onion, cut in half, quartered
2 cups sliced mushrooms
2 Roma tomatoes, diced
2 tablespoons fresh cilantro, crushed
1/2 cup crushed tomatoes
1 tablespoon Morton® Nature's Seasons® Seasoning Blend
4 eight-inch flour tortillas, warmed
Shredded jalapeño Monterey Jack cheese
Prepared salsa
