Spicy Paprika Rub

Servings: Makes 1/4 cup
Directions
Preparations:
Combine dry ingredients in small bowl. Store in airtight container in cool dry place until needed.
Cooking:
Poultry – Chicken/Turkey – Brush chicken piece with oil; rub about 1 teaspoon Spicy Paprika Rub on each chicken or turkey piece. Use additional Rub for whole bird. Allow to marinate in refrigerator at least 30 minutes. Proceed to bake, broil or grill until chicken is cooked through and juices run clear. (* Internal temperature -- 170° F. for poultry breast pieces; internal temperature -- 180° F. for poultry thighs and wings).

Variation: Spice Paste - Mix 1 tablespoon Spicy Rub with 3 tablespoons oil. ·
Brush toasted pita triangles with oil, sprinkle with Spicy Paprika Rub. Bake at 350° F for 10 minutes to lightly toast. Serve with salad. ·
Combine 1 tablespoon Spicy Paprika mixture with 4 ounces cream cheese. Use as spread for tortilla wrapped sandwiches or quesadillas.
