Chinese Spice Rub
Recipe Summary
This full-flavored rub is made with only four ingredients and gives poultry, pork, or tofu authentic Chinese flair.

Servings: Makes 1/4 cup
Directions
Preparations:
Combine ingredients in small bowl. Store in airtight container in cool dry place, until needed.
Cooking:
Chicken or Duck – Sprinkle, then pat on about 1 teaspoon Chinese Rub on each chicken piece. Use additional Rub for whole bird. Allow to marinate in refrigerator at least 30 minutes. Proceed to bake, broil or grill until chicken is cooked through and juices run clear. (* Internal temperature -- 170° F. for poultry breast pieces; internal temperature -- 180° F. for poultry thighs and wings).
Tips:
*Internal temperature for whole chicken or duck – 180° F. ·
Variation: Spice Paste - Mix 1/2 to 1 teaspoon vegetable oil or reduced-sodium soy sauce with 1 tablespoon Chinese Rub. Use on poultry pieces or pork** chops before placing on grill. ·
**Internal temperature for pork – Medium – 160° F.; Well Done – 170° F. ·
