Thyme & Lemon Rub
Recipe Summary
This versatile rub combines fresh thyme and lemon zest with Morton® Coarse Kosher Salt goes great with a wide variety of dishes including fish, pork and poultry!

Directions
Preparations:
Combine ingredients in small bowl. Store in airtight container in cool dry place until needed.
Cooking:
Poultry – Chicken/Turkey – Sprinkle, then pat on about 1 teaspoon Thyme/Lemon Rub on each chicken piece or turkey cutlet. Use additional Rub for whole bird. Allow to marinate in refrigerator at least 30 minutes. Proceed to bake, broil or grill until chicken is cooked through and juices run clear. (* Internal temperature -- 170° F. for poultry breast pieces; internal temperature -- 180° F. for poultry thighs and wings).
Tips:
*Internal temperature for whole chicken or turkey – 180° F.

Variation: Spice paste - Mix 1/2 to 1 teaspoon vegetable oil or balsamic vinegar in one (1) tablespoon Thyme/Lemon Rub to make a paste.
For Mediterranean-style vegetable vinaigrette, stir into olive oil and lemon juice.
Combine 2 minced garlic cloves with Rub; use as seasoning for roasted potatoes.
